How to choose nectarines?
Look for medium to large nectarines that are free of blemishes or bruises. Avoid nectarines with green or wrinkled skin. The color of the skin does not indicate ripeness, but the speckles on the skin do. The more speckles, the sweeter the nectarine. You can also gently press the fruit to feel if it is firm or soft. Nectarines are ripe when they have a slight give.
How to store nectarines?
Store unripe nectarines at room temperature until ripe. To speed up the ripening process, place nectarines in a paper bag and store at room temperature, out of direct sunlight. Store ripe nectarines in the crisper drawer of your refrigerator for up to five days. You can also freeze nectarines for up to a year. To do so, wash and slice them, then place them in a single layer on a baking sheet in the freezer. Once frozen, transfer them to a sealed plastic bag.

Our favorite Recipe: Grilled Nectarine Salad with Goat Cheese and Honey Balsamic Glaze
Ingredients:
4 ripe nectarines, halved and pitted
4 cups arugula
1/2 cup crumbled goat cheese
1/4 cup chopped fresh mint
1/4 cup chopped toasted walnuts
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic glaze
1 tablespoon honey
Salt and pepper to taste
Instructions:
Preheat your grill to medium-high heat.
Cut the nectarines in half and remove the pits. Brush the cut sides lightly with olive oil to prevent sticking.
Place the nectarine halves on the preheated grill, cut side down. Grill for 2-3 minutes until grill marks appear. Flip the nectarines and grill for an additional 2-3 minutes. Remove from the grill and set aside.
On a serving platter or individual plates, arrange the arugula. Place the grilled nectarine halves on top.
Sprinkle crumbled goat cheese and toasted walnuts over the grilled nectarines and arugula.
In a small bowl, whisk together the extra-virgin olive oil, balsamic glaze, and honey. Drizzle the dressing over the salad.
Scatter chopped fresh mint over the salad for a burst of freshness.
Season the salad with salt and pepper to taste. Serve immediately, allowing the warm grilled nectarines to complement the cool arugula and the rich flavors of goat cheese and honey balsamic glaze.
